About 10-20 degrees before the target nozzle temperature, the printer reboots and cancels everything.

it sounds like your psu can’t handle the load and at some point the supplied voltage drops below what the controller needs and when that happens the board reboots. To confirm this you could try measure the voltage when the printer is heating up and if you see a significant drop you know that the psu can’t supply enough current.
