I’ve had my brother making parts for me, but its time to start making my own! I have a flashforge creator pro on the way. From the reviews, it seems like issues arise from the 2 extruder setup. I have no need for the second one, thought it would be easier to mod the unit to just a single? Is there a unit out there that folks would recommend? Or would it just be easier to remove the nozzle from one of them??

Easiest way would be to unscrew the nozzle and you should be good to go. At some point later on you will probably be happy about the second extruded as you can print soluable support material making more complex structures possible.
If it is a new printer then I would leave the nozzle and extruder you don’t want to use alone. Presumably the right hand one. If you take it all off then when you decide to use it you will have to reinstall and get it aligned to the other nozzle again. No real reason to mess with it.
