I am working with a Makerbot Replicator +, and the printing bed is pretty banged up from use. Rather than replacing the entire print bed, this: http://store.makerbot.com/parts-accessories/grip-surface-3-pack-for-replicator/ is essentially all I need to replace, correct? Just peel the current one off of the plate and stick a new one down? I am having a hard time finding specific documentation for build surface maintenance.

You are correct, if you remove the build plate from the printer and flip it upside down you are able to push the old grip surface off the bed via a small hold in one of the corners. After that you can turn the plate back around and continue to peel the grip surface away from the plate.
